“Jean, do you know where Max is now?” This has to be the one question I have been asked most commonly over the years. People always want to know where to go for the best sushi and I always tell them to go wherever Max works. I have had sushi all over the United States and Japan. I know good sushi. Max Takao is, hands down, the best sushi chef I have seen. Of course, the chefs in Japan are the best and all world-class, but Max is unique in that he is so fast and able to adapt to any and all special requests, something you will NOT find in Japan. Japan’s sushi chefs are trained, sometimes for several generations, very specifically in the art of sushi-making. Basically, it’s best to just let them serve you whatever they want. Max, on the other hand, will prepare just about any request you can come up with. And the attention to detail he gives to his creations is unmatched. He’s also an extreme perfectionist and if he is selecting the fish, you can count on it being very good and very fresh!

Yes, he is at Tabu Sushi in Old Town Temecula. I gave them a 5 Heart Rating as well, once they hired Max. π
